ASIAN-STYLE COLE SLAW

Yield: 8 servings

INGREDIENTS

-  4 cups coarsely shredded green cabbage
-  1-1/2 cups coarsely shredded purple cabbage
-  1 small yellow bell pepper, cut into matchstick sized pieces
-  1/2 cup coarsely shredded carrot
-  1/2 cup thinly sliced scallions
-  1/3 to 1/2 cup chopped fresh cilantro

DRESSING:
-  1/4 cup rice vinegar
-  3 tablespoons peanut butter
-  2 tablespoons canola oil
-  1-1/2 tablespoons reduced-sodium soy sauce
-  1-1/2 tablespoons honey
-  1 teaspoon ground ginger

DIRECTIONS

Combine the cabbages, bell pepper, carrot,
scallions, and cilantro in a bowl and toss to mix.

Combine all of the dressing ingredients in a small
bowl and whisk until smooth. Pour over the cabbage
mixture and toss to mix well. Serve immediately or
cover and refrigerate until ready to serve.
